Bruschetta with Roasted Peppers and Mozzarella
Serves 8
Ingredients
4 (2 cups) roasted bell peppers, peeled, seeded and sliced
2 TB finely chopped fresh basil
1 TB balsamic vinegar
Salt to taste
Ground pepper to taste
1 slice country bread (1/2" thick), toasted
1 clove garlic, peeled and cut in half
2 oz. fresh mozzarella, cut into thin strips
2 tsp extra virgin olive oil
Directions
Preheat broiler. In medium bowl, combine peppers, basil and vinegar. Season with salt and pepper. Rub both sides of bread with the cut sides of the garlic. Place bread on baking sheet, top with roasted pepers. Lay mozzarella strips on a diagonal over the peppers and drizzle with oil.
Broil bruschetta, 6 inches from the heat source, until the cheese melts and starts to brown. Serve hot.
