Baked Salmon
Omega-3s are a type of polyunsaturated fat found mainly in fatty fish like wild salmon. Research shows that omega-3 fats can lower cancer risk, slow tumor growth and reduce the side-effects from cancer treatment.

Ingredients
8 8-oz fresh wild salmon filets
Olive oil
2 large organic fresh tomatoes, diced
1 cup organic shitake mushrooms
3 cloves organic garlic, minced
3 tbs. Herbes de Provence (chopped thyme, rosemary, oregano, savory and marjoram)
2 medium organic red onions, sliced thin
1 cup feta cheese, crumbled
Salt and pepper to taste
Directions
Preheat oven to 350 degrees. Place salmon on foil sheet skin side down. Brish with olive oil and season with salt and pepper. In a bowl, mix diced tomato, mushrooms, garlic and Herbes de Provence. Spoon mixture on top of salmon. Place red onion on top and fold the foil closed. Bake for 25 minutes. Remove to serving dish, top with feta cheese and serve.
