Green Beans with Oregano

Oh, Oregano! Give your dishes an extra antioxidant boost with a dash of oregano. Recent research revealed that oregano has up to five times more antioxidant activity than other ordinary herbs, such as basil. Antioxidants help protect against aging and disease by neutralizing cell-damaging free radicals.

Serves 4

Ingredients
2 cloves garlic, thinly sliced
2 Tbsp olive oil
3/4 lb fresh green beans, blanched
1 tsp fresh oregano (or 1/2 tsp. dried)
1 Tbsp lemon juice
Salt and pepper to taste

Directions
Saute garlic in oil until light brown. Add the green beans, salt and pepper. Cook until heated and crisp-tender (about 3-4 minutes). Add oregano. Sprinkle with lemon juice. Mix and serve.
