Greens with Shiitake Mushrooms
Golden Greens -- Greens such as spinach, lettuce and chard can improve your complexion, ward off the flu and help your liver deal with toxins. What's more, greens are loaded with phytochemicals, substances in plants that can help prevent cancer.
Serves 4
Ingredients
2 lbs fresh spinach or mustard greens
2 tbsps olive oil
1/2 medium onion diced
8 ozs. sliced shiitake mushrooms, stems removed
1 tsp minced garlic
2 tbsps balsamic vinegar
Pine nuts or dired red peppers
Directions
Saute onion and mushrooms over medium heat about 5 minutes until onions are semi-transparent, stirring constantly. Add garlic, greens and vinegar. Cook until greens are soft, 6-8 minutes, stirring constantly. Garnish with pine nuts or dried red peppers.
